Our intention is to support local, create sustainable cycle and give what is best to our guests. By doing that, we mainly use local organic ingredient from many part of Thailand that sometime local people don’t have a chance to sell them to anyone. Some are wild and so traditional. This content contains some of the example ingredients that we use to create your drinks and pairing dishes.

: Flacourtia Indica :
Our Flacourtia Indica come from Local Chiang Rai forest. In the middle of Akha Village. Even this forest is not certified organic. But according to the location and how they growth we might say that the nature of this location is beyond Organic. 

Taste : ( Fresh ) Astringency, a little Acidity, bitter sweet. Soft mouthfeel
          : (Our Fermented) : Acidity, Red-Wine Vinegar like, Smooth Salty and Bitter Sweet. Full body mouthfeel.

: Sugar Onion Root :

This Sugar Onion Root is famous around the area of Myanmar, Chiang Rai. This local root are not well known to city people. You may see this root only in indigenous food. 

We got this one from Chin Haw People. Chinese people who migrated to Thailand via Myanmar or Laos. They are nice and lovely.

Character : Strong Aromatic ( Onion + Garlic Chive  Aroma Like ), Hidden Sweet taste.

Local Mulberry Leaf

Mulberry (Morus) belongs to the Moraceae plant family and includes several species, such as the black mulberry (M. nigra), red mulberry (M. rubra), and white mulberry (M. alba). 

We got this Huge Morus Leaves from Akha Village. Chiang Rai. Grow wildly up in the hill. The Specie is M.alba.
We mainly use this for our Fermentations such as Soy Sauce, Shoyu and etc.
